Working at a farmers market this summer, I’ve been exposed to so many amazing local Ontario products. Previously, I was already looking for Canadian produce to help cut back on my carbon footprint; but there are microgreen growers right in the city, green roof farmers who make their own salsa, and beekeepers who are experimenting with flavoured honey.
I love to use honey when I cook. It’s a great way to cut back on refined sugar and add additional touches of flavour to your baking. I have also been a bartender on and off since I could legally serve alcohol, and it makes a great substitution for simple syrup.
When making cocktails with honey, it’s important to measure out the honey before you measure out your other ingredients. It will help wash all the honey out of your jigger and into the drink. I also do my best to give the drinks a good dry shake (a shake or stir without ice) to make sure the honey doesn’t solidify and sink to the bottom of your drink.
Blueberry Honey Gin Smash
This is a super refreshing cocktail to make for hot days. An easy way to elevate your afternoon Gin and Tonic.
Smokey Gin Smash
Equipment
- highball
- Muddler or Pestle
- Jigger
- Shaker
Ingredients
- 6 blueberries
- 1.5 oz Gin Ungava
- 0.5 oz Lime Juice
- 0.5 oz Smoked Honey
- 4 oz Tonic Water
Instructions
- muddle your blueberries with the gin, honey, and lime juice at the bottom of a shaker
- Dry shake your drink to fully incorporate honey
- Add mixture to a highball, then fill your glass with ice. Adding the alcohol after the ice causes the ice to melt quickly, and will water down your drink, also, the more Ice you ad to the drink, the colder it will stay and the stronger your drink will be (because there is less room for the mix)
- Top with tonic water and give the drink a little stir
- Garnish with fresh mint or rosemary if you're feeling fancy
Smokey Honey Margarita
There are so many cool margaritas you can make. If you haven’t seen strawberry or watermelon margarita’s you should definitely bookmark those recipes. But this little hit of spice is the perfect addition to your backyard barbeque.
Smokey Jalapeno Margarita

Ingredients
- 1.5 oz Tequila Hornitos
- 1 oz Lime Juice
- 0.5 oz Smoked Honey
- 2 slices jalapeno
Instructions
- In your shaker, add all your ingredients and give a quick dry shake
- Strain out Jalapenos, add ice, and shake for 45 seconds
- dump the entire drink, including the ice into a rimmed glass with a few fresh ice cubes at the bottom
- Garnish with a lime wedge
Mezcal is almost a cousin of tequila, usually made of smoked-agave. If you love mezcal, you’ll love this smokey honey cocktail. Great for accompanying tacos or weekend brunch.

Ingredients
- 1.5 oz Tequila Hornitos
- 1 oz Lime Juice
- 0.5 oz Smoked Honey
- 2 oz Grapefruit juice
- 4 oz Soda Water
Instructions
- Dry shake everything but your soda water to incorporate the honey
- Pour into a glass and heap with ice (I like stemless wine glasses for this one)
- Top with soda water and give a quick stir
- Garnish with a fresh sprig of rosemary

Ingredients
- 2 oz Bourbon Bulliet
- 0.5 oz Smoke Honey
- 3 dashes Bitters
- 0.5 oz cherry-infused bourbon
Instructions
- Measure all your ingredients in a glass and stir with a spoon until the honey is fully dissolved (30 seconds)
- Add Ice, stir for 15 seconds
- Garnish with orange peel and bourbon cherries. Rub the orange peel around the edge of the glass to increase the aromatic effect
No shaker is needed for this sweet and smokey honey cocktail. When you stir the ice in this drink, it is melting and helping open up some of the flavours of the bourbon. If you’re drink is a little strong, try stirring it a little longer.
Alcohol-infused fruit is a great garnish to keep on hand for cocktails, and bourbon cherries are a classic. Simply pit a few cherries and fully submerge them in bourbon for at least a day.
